Ribolla Gialla is an ancient white grape variety primarily grown in the Friuli-Venezia Giulia region of northeastern Italy and the neighboring Slovenian Brda area. Renowned for its vibrant acidity and subtle complexity, Ribolla Gialla wines display a fresh and lively aromatic profile with notes of citrus blossom, green apple, pear, and hints of almond and white florals. On the palate, these wines often reveal a crisp mouthfeel, delicate minerality, and flavors of lemon zest, stone fruits, and saline undertones, culminating in a refreshing, clean finish.
Traditionally, Ribolla Gialla is vinified as a dry white wine, both in stainless steel for optimal purity and increasingly in skin-contact (orange) wine styles, which add layers of texture and earthy complexity. Sparkling versions are also produced, emphasizing the grape's natural acidity and finesse.
Ribolla Gialla pairs exceptionally well with a variety of dishes, including seafood risotto, grilled shellfish, sushi, light poultry, and vegetable-based spring pastas.
