Vidal is a versatile white grape variety best known for its remarkable suitability in the production of both dry and, most famously, ice wines. The varietal typically exhibits a vibrant aromatic profile, characterized by lively notes of citrus fruits such as grapefruit and lemon, layered with ripe tropical hints of pineapple and mango. On the palate, Vidal wines deliver a fresh, balanced acidity complemented by flavors ranging from honeyed apricot and peach in sweeter styles, to crisp green apple and pear in drier expressions.
Originally bred in France but now most commonly cultivated in Canada, particularly Ontario and Quebec, Vidal thrives in cooler climates. Its naturally high acidity and thick skin make it especially resilient, ideal for late harvest and ice wine production.
Typical styles include beautifully aromatic, lusciously sweet ice wines with concentrated fruit flavors and refreshing acidity, as well as clean, fruit-driven dry and off-dry table wines. Vidal wine pairs exceptionally well with richly flavored foods. Sweet ice wines complement blue cheeses, foie gras, and fruit-based desserts, while dry Vidal works equally well with seafood, poultry, and light salads. Its versatility makes it a favorite in food and wine pairings.
