Dzelshavi is an ancient red grape variety indigenous to Georgia, most notably thriving in the regions of Kartli and Imereti. Traditionally valued for its resilience and generous yields, Dzelshavi produces wines with a remarkable pale ruby hue and moderate alcohol levels. On the nose, it presents a vibrant aromatic profile dominated by notes of wild red berries, cranberry, and pomegranate, often accented with hints of dried rose petals and subtle herbal undertones. The palate is delicately textured, featuring crisp acidity, light body, and fine-grained tannins, culminating in a refreshing, fruit-forward finish.
Dzelshavi is most commonly vinified in both traditional qvevri and modern tank methods, resulting in an array of styles ranging from dry and elegant table wines to lightly chilled summer expressions. Its naturally high acidity and gentle tannic structure make it particularly versatile at the table.
Ideal food pairings include grilled poultry, roasted vegetable dishes, mild cheeses, and Georgian specialities such as pkhali or chakhokhbili. The wineâs freshness and subtle complexity also complement Mediterranean cuisine, notably tomato-based stews and herbed lamb, enhancing both the wine and the dish.
