Tsolikouri is a white grape variety indigenous to western Georgia, particularly renowned in the Imereti region. It thrives in the humid, moderate climate and lush, rolling hills near the Rioni River. Tsolikouri wines often display a bright straw-yellow color with greenish reflections, offering a delicate aromatic profile characterized by notes of green apple, ripe melon, pear, and subtle white floral hints. On the palate, these wines are refreshing and balanced, featuring crisp acidity, medium body, and flavors of citrus, stone fruit, and sometimes a touch of honeyed minerality.
Traditionally, Tsolikouri is crafted in both European and traditional Georgian qvevri styles. The classic European-style wines are light to medium-bodied, dry, and vividly aromatic, while skin-contact qvevri versions present deeper color, more pronounced tannins, and layered complexity. Some sparkling wines are also produced from Tsolikouri, prized for their fresh, zesty character.
Ideal food pairings include grilled fish, shellfish, roasted poultry, fresh salads, and a variety of creamy or soft cheeses, as well as traditional Georgian dishes like chkmeruli (garlic chicken) and pkhali (vegetable pâté). Its versatility and approachable palate make Tsolikouri an excellent choice for a wide range of culinary experiences.
