White Grape Variety

Juhfark is a rare and indigenous grape variety primarily grown in Hungary’s historic Somló wine region. Its name, meaning “sheep’s tail” in Hungarian, refers to the elongated, cylindrical shape of its grape clusters. Juhfark is renowned for producing distinctive, terroir-driven white wines with a pronounced mineral character, reflecting Somló’s volcanic soils. The aromatic profile is subtle yet complex, often exhibiting notes of green apple, citrus peel, quince, and hints of flint or smoke. On the palate, Juhfark wines are typically dry, with high acidity and a robust structure, delivering flavors of lemon zest, crisp pear, and a salty mineral finish that lingers.

Juhfark is almost exclusively cultivated in the Somló region, although small plantings exist in other areas of Hungary. The wines are celebrated for their ability to age, achieving greater depth and complexity over time. Typical styles range from crisp, bone-dry expressions to richer, late-harvest examples, though the dry style dominates modern production.

Juhfark pairs exceptionally well with seafood, poultry, and dishes featuring creamy sauces. It complements goat cheese, roasted pork, and Central European specialties like schnitzel or lightly spiced sausages, making it a versatile choice for refined food pairings.
