Assyrtiko is a distinguished white grape variety originating from the Greek island of Santorini. Renowned for its vibrant acidity and remarkable minerality, Assyrtiko produces wines with a crisp, refreshing profile. Aromatically, the wines often display notes of citrus—lemon zest, lime, and grapefruit—layered with green apple, white peach, and subtle floral undertones. Distinctive saline and smoky nuances, a result of the volcanic soils where it thrives, lend complexity and finesse.
While Santorini remains the primary and most celebrated terroir for Assyrtiko, the grape is now cultivated throughout Greece, including regions such as Macedonia and Attica, as well as select international locations. Styles range from unoaked whites emphasizing purity and minerality, to barrel-aged versions offering richer textures and a creamy finish. Assyrtiko is also used in sweet wines, notably Santorini’s historic Vin Santo.
Due to its vibrant acidity and mineral-driven character, Assyrtiko pairs exceptionally well with fresh seafood, shellfish, sushi, and dishes highlighted by lemon or herbs.
