Šipon, known internationally as Furmint, is a white grape varietal highly regarded for producing complex, characterful wines. The grape is most notably grown in Eastern Europe, with its central strongholds in Hungary’s Tokaj region and Slovenia’s Štajerska. Šipon wines are prized for their vibrant acidity and compelling aromatic profile, often displaying notes of green apple, pear, white peach, citrus, and, in some cases, hints of dried apricot, honey, and subtle mineral undertones.
On the palate, Šipon delivers a crisp, refreshing quality in dry expressions, while also forming the backbone of some of the world’s most celebrated sweet wines, such as Tokaji Aszú. Winemaking styles range from bone-dry and zesty to lusciously sweet, with occasional use of oak adding creamy, spicy complexity.
Versatile with food, Šipon pairs excellently with fresh seafood, shellfish, roasted poultry, and mildly spicy Asian cuisine. Its sweeter styles complement rich patés, blue cheeses, or fruit-based desserts. With its unique balance of texture, acidity, and diverse styles, Šipon (Furmint) is a distinguished grape choice for both casual sipping and sophisticated gastronomy.
