The grape variety Refošk

Refošk is a distinctive red grape variety predominantly cultivated in Slovenia’s Primorska region, especially the coastal areas of Istria, as well as regions in northeastern Italy and Croatia. Renowned for its vibrant acidity and deeply pigmented skins, Refošk wines are notable for their intense, youthful purple tones and pronounced aromatic character. On the nose, they often display fresh notes of wild red berries, sour cherry, blackberry, and subtle herbal undertones, occasionally complemented by hints of forest floor and spice.

On the palate, Refošk delivers lively, tangy acidity supported by moderate tannins, offering flavors reminiscent of blackcurrant, red plum, and earthy minerals, sometimes with a touch of balsamic or peppery nuances. This grape is most commonly vinified as a varietal red wine, ranging from light, fresh, early-drinking styles to more structured, cellar-worthy examples, and even as rosé.

Food pairings are especially successful with dishes featuring rich tomato sauces, grilled meats, charcuterie, and Mediterranean-inspired fare. It also accompanies mature cheeses and mushroom-based dishes exceptionally well. Refošk’s natural acidity and fruit-forward profile make it an excellent companion to flavorful cuisine, offering both balance and refreshment.
