Sauvignonasse, also known in some regions as Friulano, is a white grape variety that produces wines distinguished by their fresh and inviting character. Aromatically, Sauvignonasse offers subtle yet complex notes of green herbs, almond blossom, delicate pear, and white peach, occasionally layered with citrus zest and a hint of minerality. On the palate, these wines are typically dry, medium-bodied, and marked by lively acidity. Flavors often echo the nose, with an added touch of almond and a slightly saline finish that enhances their freshness.
The grape is predominantly grown in Italy's Friuli-Venezia Giulia region, where it expresses a distinctive regional identity, as well as in Slovenia (where it may be called Sauvignonasse or Jakot), and parts of Chile (sometimes labeled Sauvignon Vert).
Typical wine styles include crisp, unoaked whites that highlight purity and freshness, though some producers experiment with brief skin contact or neutral oak for added complexity.
Sauvignonasse pairs beautifully with a variety of foods. Ideal accompaniments include fresh seafood, shellfish, grilled white meats, spring vegetable risottos, and mild cheeses. Its vibrant acidity also complements herbed salads, asparagus, and sushi, making it a versatile choice at the table.
