Mansois, also known as Fer Servadou, is a distinctive red grape variety primarily cultivated in Southwest France, particularly in the Aveyron and Marcillac regions. This grape is celebrated for producing wines with a deep ruby color and pronounced aromatic complexity. The nose typically reveals notes of red and black fruits such as wild raspberry, blackberry, and currant, complemented by peppery, herbal, and floral undertones, and occasionally a hint of smoky minerality.
On the palate, Mansois wines are medium-bodied, offering vibrant acidity and well-integrated tannins. Flavors echo the aromatic profile, featuring fresh, juicy fruit balanced by earthy nuances and a subtle rusticity. These wines often exhibit a refreshing and lively finish, making them highly approachable in their youth while also capable of moderate aging.
Mansois is most commonly vinified as a single varietal in Marcillac AOC, but it can also be found in blends within Gaillac and other neighboring appellations. The typical style is dry red, though some producers experiment with rosé.
Recommended food pairings include grilled meats, charcuterie boards, roasted poultry, and earthy dishes such as lentil stews or mushroom risotto, where the wine’s structure and bright fruit notes provide an excellent complement.
