Savagnin is an ancient white grape variety most famously grown in the Jura region of eastern France. This varietal is best known for producing some of Jura’s most iconic wines, including Vin Jaune and oxidative-style whites. Aromatically, Savagnin typically offers complex notes of green apple, citrus peel, almond, and walnuts, intertwined with subtle floral and earthy undertones. On the palate, Savagnin is distinguished by marked acidity, a full body, and a lingering mineral finish, often with nutty, saline, and spicy layers that reflect its unique winemaking styles.
The Jura remains the primary region cultivating Savagnin, although it is also present in small quantities in Switzerland and Germany (where it is sometimes known as Traminer). Typical wine styles include Vin Jaune—a sherry-like, oxidatively aged wine—as well as dry, ouillé (topped-up) whites that emphasize fresher fruit and floral characteristics.
Savagnin pairs exceptionally well with regional dishes such as chicken with morels and cream, Comté cheese, and rich seafood preparations. Its brightness and structure allow it to stand up to earthy, creamy, and umami-rich foods, making it a versatile and distinctive addition to any wine lover’s collection.
