Pedro Ximénez is a distinguished white grape variety predominantly cultivated in Spain’s Andalusia region, particularly in the D.O. Montilla-Moriles and Jerez (Sherry) areas. Renowned for producing lusciously sweet dessert wines, Pedro Ximénez offers an intensely aromatic bouquet featuring notes of dried figs, raisins, honey, toffee, and molasses, often complemented by undertones of candied citrus, roasted coffee, and exotic spices. On the palate, these wines exhibit an opulent texture, harmonious acidity, and remarkable complexity, with persistent flavors of caramelized fruits and nuts.
