The grape variety Xarel·lo

Xarel·lo is an indigenous white grape variety from Catalonia, Spain, most renowned as a key component in Cava, Spain’s traditional method sparkling wine. Xarel·lo wines frequently exhibit a vibrant aromatic profile that includes green apple, pear, citrus, and fresh herb notes, often complemented by subtle white floral and fennel undertones. On the palate, Xarel·lo stands out for its bright acidity, medium body, and marked minerality, sometimes showing saline hints derived from Mediterranean vineyards.

The Penedès region is the grape’s heartland, where it thrives in the Mediterranean climate and calcareous soils. While Xarel·lo is predominantly used in sparkling wine blends alongside Macabeo and Parellada, it is increasingly vinified as a varietal, producing expressive still wines and even barrel-fermented styles that reveal additional complexity and texture.

Xarel·lo’s refreshing character and natural acidity make it highly versatile for food pairings. It works beautifully with seafood—especially shellfish and white fish—grilled vegetables, light salads, sushi, and young cheeses.
